Spinach Pancakes

This is my favorite breakfast recipe! It's fast, delicious & most important super healthy! 

Here's the step by step explaining everything to make it as easy as possible for you to cook it at home.

Prep time: less than 10 mins

Cook time: about 3-5 mins per pancake

Ingredients:

1-2 tablespoons finely chopped yellow onion

1 cup roughly chopped spinach

2 eggs

Salt & pepper to taste

Toppings:

4-5 sliced cherry tomatoes

1 tablespoon chopped Italian Parsley

1-2 tablespoons Feta cheese **This is based on 1 person. Simply multiply this by the number of people you're cooking for to make more.

Instructions:

Mix the ingredients together & make sure the mixture feels thick. Preheat your pan with low heat & use avocado oil. You'll know the pancake is ready to flip when it doesn't look runny. 

BEWARE avocado oil has a higher cooking temperature so it can burn your food if you're not paying attention.
