Vegetable Soup
This is PACKED with nutrients!!!
It's so important to eat healthy & nourish ourselves ESPECIALLY when trying to conceive or pregnant.
A good rule of thumb is that it's good to mix up the colors in your food. This helps get a variety of vitamins & minerals.
The soup mix itself is made of green split peas, barleys, lentils, and pasta.
I add Potatoes, Carrots, Zucchini, Yellow Squash, and Cilantro.
Ingredients:
1 Cup Bob's Red Mill Vegi Mix Soup
4-6 Cups of water (depending on how soups you want it)
1/4 Chopped Yellow Onion
2 Sliced Small White Potatoes
1-2 Sliced Carrots
1/2 Sliced Large Zucchini
1/2 Sliced Large Yellow Squash
Handful of Chopped Cilantro
Chicken Bouillon (to taste)
Instructions:
Sear Onion in about 2-3 Tbsp of Olive Oil
Sear Onion till golden
Add soup mix sear 2 mins, add salt & pepper
Add water, bring to a boil and cook for 35-45 mins (until lentils feel softer)
Add Potatoes 1st, let them half way cook
Add Bouillon to taste
Then add the rest of the veggies
Bring to a boil again.
Serve over rice as a meal or a side dish.
